Gluten-free cooking does not have to be hard

Gluten-free cooking does not have to be hard. In fact, I have learned that simplicity can be the soul of dinner. But don’t get me wrong, keeping it simple does not have to mean bland or uninspired. The beauty of keeping it simple can mean something delicious and even sort of elegant. Tonight for dinner, I had some very boring looking pork chops daring me to make them fabulous. I grabbed the olive oil, and started drizzling. A tiny voice in my head said, panicked, aren’t you going to measure? No! I retort in my head, I scoff at staid measuring! I then grabbed the honey and drizzled the chops as well. Just enough that they looked pretty covered. I then squeezed the juice of two limes over it all, and put a layer of chopped onions on top. I sprinkled a bit of cayenne on top, and voila. I put it in the fridge to marinate. This took me all of 10 minutes, and already the kitchen smells delicious. Later, I will put them in the oven with some baked potatoes, and all will be right with the world. I will pair them with drinks from Orangina products that I found.

I bet they would be even better grilled….
