1 cup Ozma Master Mix - an easy baking mix you can make yourself. Get the recipe here.
1/2 cup unsweetened cocoa powder (not Dutch)
1 1/2 teaspoons xanthan gum
1 teaspoon baking soda
3/4 teaspoon salt
1 cup sugar
2 teaspoons almond or vanilla extract
1/2 cup rice milk
1/3 cup safflower oil
1 large egg
3/4 cup warm water
Preheat oven to 350F. Generously grease 9 x 9-inch round or square nonstick pan or 11 x 7-inch nonstick pan. Set aside. Place all ingredients, except hot water, in large bowl and blend with electric mixer. Add hot water and mix until thoroughly blended. Pour into prepared pan and bake for 30-35 minutes or until toothpick placed in center of cake comes out clean. Serves 12.
