Amazing Chicken Salad

Description:
This recipe has no wheat, gluten, milk, casein, corn, sugar or soy. It has optional nuts, and can be eggless if you pick an eggless mayo. This is really good for you if you pick a high quality mayonnaise with out a lot of junk in it, because it is a source of good fats and protein. Don’t eat a “low-fat” diet- fat does not make you fat, sugar and carbs do. So don’t worry about the mayo in this one, enjoy it!

Ingredients:

All of the ingredients in this are variable/ optional. I make it up according to how many people I have to feed, and adjust the amounts accordingly.

Enough cooked chicken chunks to feed the number of people you are serving
1 bag seedless red grapes
a bunch of green onions, chopped
2 or 3 stalks of celery, sliced
1 or 2 red peppers, chopped
Enough mayonnaise to moisten (Spectrum mayonnaise is a good brand)
Jane’s crazy mixed-up salt and black pepper to taste
Pecans, chopped
Slices of watermelon, cantelope, and/or honey dew

Instructions:
In a large bowl, combine chicken chunks, grapes, onions, celery, and peppers. Add enough Mayonnaise to moisten it all and add salt and pepper to taste. Just before serving, sprinkle the top of the salad with pecans. Serve a scoop or two on top of fruit slices. Can also be put in a pita for those who can eat wheat/gluten.
