Maple Vanilla French Toast
This is a great recipe for Christmas Morning or when having guests (or being a guest). Make them ahead of time and cook them when you are ready!
Ingredients:
9 eggs
2 1/4 cups milk substitute (I like coconut milk, it is nice and creamy.)
1/3 cup maple syrup
1/4 cup sugar (optional)
1 1/2 teaspoons vanilla (watch for allergens)
3/4 teaspoon salt
12 pieces of your favorite GFCF bread. We like Food for Life and Enjoy Life brands.
1/4 cup ghee (or margarine), melted
Warm maple syrup
Instructions:
Whisk eggs in medium bowl to blend. Gradually whisk in coconut milk. Add 1/3 cup maple syrup, sugar, vanilla, and salt; whisk to blend. Divide custard between two 13x9x2-inch glass baking dishes. Arrange bread in single layer in dishes. Let soak 10 minutes. Turn over, cover, and refrigerate overnight.
Two cooking options:
1. Fry when you are ready to eat:
Heat large griddle or heavy large skillet over medium heat. Working in batches, brush griddle with some ghee. Add soaked bread; cook until brown on bottom, about 4 minutes. Turn French toast over; cook until bottoms are brown, about 4 minutes.
2.Bake them so you have your hands free to do other things:
Bake the toast in the glass pans in a 400o F oven for about 30-40 minutes. You will need to turn the toast over about halfway through to crisp up both sides.
Transfer to plates. Serve with additional syrup and Cinnamon Applesauce.
